This Fermentis SafTeq Blue is a specialty yeast specifically selected by Fermentis and CIATEJ to ferment blue agave (tequilana weber variety) juices for tequila production, with or without the addition of other sugar sources. It performs exceptionally well thanks to its tolerance for furfural and other toxins typically found in agave juices, along with high resistance to osmotic pressure, alcohol, and elevated fermentation temperatures that make it ideal for high gravity conditions. It exhibits faster fermentation kinetics than common tequila yeasts, shortening fermentation times without compromising results, and is equally suitable for mezcal production.

For best results it should be stored below 10°C (50°F) in dry conditions, where it remains stable until the best before date printed on the packaging. These yeast bricks are for brewing large batches at one time, or pinching off quantities for smaller volumes of brew. Once opened if you are not using the entire brick it should be placed in a bag, vacuum sealed and returned to a cool, dry, storage area at 4°C (59°F), where it remains stable for up to 7 days. Doing this will help to preserve the yeasts fermenting ability and reduce the risk of contamination of the remaining yeast.
