This Fermentis SafSpirit M-1 is a distilling yeast renowned as the go-to strain for Scotch and single malt whisky production. It produces excellent congeners that develop beautifully during barrel aging, with good alcohol resistance over 15% and very good attenuation thanks to its ability to assimilate complex sugars, making it the best option for whiskies produced from malt where enzyme additions are not allowed. It is also a great choice for continuous fermentation, and despite its Scottish heritage it is suited to producing all kinds of whiskies and distilled grain beverages, raw or malted, that are destined to be aged in barrels.

For best results it should be stored below 15°C (59°F) in dry conditions, where it remains stable until the best before date printed on the packaging. These yeast bricks are for brewing large batches at one time, or pinching off quantities for smaller volumes of brew. Once opened if you are not using the entire brick it should be placed in a bag, vacuum sealed and returned to a cool, dry, storage area at 4°C (59°F), where it remains stable for up to 7 days. Doing this will help to preserve the yeasts fermenting ability and reduce the risk of contamination of the remaining yeast.
