This Fermentis SafSpirit HG-1 is a high-performance distilling yeast developed for Very High Gravity (VHG) fermentation. With high tolerance to ethanol it can reach up to 18% depending on process and substrate, while also offering very good resistance to osmotic pressure and elevated fermentation temperatures as a thermotolerant strain. It maximizes production capacity and generates significant energy savings, and is versatile enough to ferment all kinds of mashes, worts and juices made from grain, potatoes and other starches, sugar cane substrates, agave or tequila juice, and pure sugar solutions, generally producing neutral alcohol profiles.

For best results it should be stored below 15°C (59°F) in dry conditions, where it remains stable until the best before date printed on the packaging. These yeast bricks are for brewing large batches at one time, or pinching off quantities for smaller volumes of brew. Once opened if you are not using the entire brick it should be placed in a bag, vacuum sealed and returned to a cool, dry, storage area at 4°C (59°F), where it remains stable for up to 7 days. Doing this will help to preserve the yeasts fermenting ability and reduce the risk of contamination of the remaining yeast.
