LalBrew Pomona is a modern hybrid yeast selected for exceptional flavour and fermentation performance in hoppy beers. Named after the Roman goddess of fruit trees, this strain produces a unique and juicy flavour profile with notes of peach, citrus, and tropical fruits. Developed by partner Escarpment Laboratories using advanced yeast breeding and adaptive laboratory evolution in high ABV and highly hopped IPA fermentations, the result is a fruity, stress-tolerant, and robust strain that enhances biotransformation of hop compounds and contributes to a stable haze, making it ideal for modern IPA styles. Popular styles brewed using this yeast are New England IPA, American IPA, Imperial IPA, Session IPA, American Pale Ale, Blonde Ale, American Wheat, Cream Ale, Kettle Sours, Berliner Weisse, and other hop-forward or fruit-forward styles.
