LalBrew Farmhouse is a non-diastatic hybrid yeast that produces dry, expressive saisons without the risk of over-attenuation. This yeast takes the best parts of traditional Saison strains and has been specially selected to remove the STA1 gene responsible for diastatic activity, while patented technology from the University of California Davis ensures the strain will not produce hydrogen sulfide (H2S) off-flavors. The flavour profile is complex and characterful, with notes of clove, pepper, and fruity esters that can be dialled up or down depending on fermentation temperature. Popular styles brewed using this yeast are Saison, Belgian Farmhouse Ale, Belgian Pale Ale, Belgian Blonde Ale, Belgian Tripel, Belgian Specialty Ales, and other rustic farmhouse-inspired beers.
