Using Alpha Amylase will contribute to a more complete fermentation, by breaking down more complex sugars than yeasts typically are able to.

This will result in a higher ABV as well as a cleaner beer with less sediment.

To use, add 5 g of the enzyme, bring your wort to around 185 to 203°F (85 to 95°C), and add the other 10 g of enzyme.
