DistilaZyme BG is a beta-glucanase enzyme made for distilled spirits production. It's primary endo-beta-glucanase activity hydrolyzes the (1-3) and (1-4) linkages in beta-D-glucans, the viscous compounds naturally present in rye, barley, wheat, and other grains. The result is a thinner, easier-to-pump mash and a smoother downstream process. DistilaZyme BG and DistilaZyme AA work together during mashing for best results.
