DistilaMax XP is a versatile yeast strain selected for fermenting malted grain substrates with high efficiency. It readily converts maltose, maltotriose, and the wider range of sugars found in malted cereals, and stands up well to demanding production conditions, including high-gravity worts and warm fermentation environments. With strong tolerance to both heat and ethanol, it gives whisky producers reliable performance, predictable kinetics, and a balanced congener profile that supports each distillery's signature character.
These yeast bricks are for brewing large batches at one time, or pinching off quantities for smaller volumes of brew. Once opened if you are not using the entire brick it should be placed in a bag, vacuum sealed and returned to a cool, dry, storage area below 15°C, where it remains stable for up to 36 months. Doing this will help to preserve the yeasts fermenting ability and reduce the risk of contamination of the remaining yeast.
