DistilaMax NT is a trusted distiller's yeast widely used across Scotland for both grain and malt whisky production. Suited to wort made from malted barley or a range of grains, it ferments cleanly and reliably across a wide temperature window and stays vigorous even when fermentations run warm. Distillers value it for the fruity, complex congener profile it builds into the new-make spirit, contributing both expressive character at distillation and depth that carries through maturation. These yeast bricks are for brewing large batches at one time, or pinching off quantities for smaller volumes of brew. Once opened if you are not using the entire brick it should be placed in a bag, vacuum sealed and returned to a cool, dry, storage area below 15°C, where it remains stable for up to 36 months. Doing this will help to preserve the yeasts fermenting ability and reduce the risk of contamination of the remaining yeast.
