This SafSour LP 652 is a specialized yeast developed to produce clean and refreshing sour beers. It converts sugars into lactic acid, delivering a bright, crisp acidity with tropical and citrus notes. This strain works quickly in non-hopped wort, reliably lowering the pH to around 3.2–3.6 within 24 to 48 hours when pitched at the right temperature.

These yeast bricks are for brewing large batches of ale at one time, or pinching off quantities for smaller volumes of brew. Once opened if you are not using the entire brick it should be placed in a bag, vacuum sealed and returned to a cool, dry, storage area below 4°C, where it remains stable for up to 36 months. Doing this will help to preserve the yeasts fermenting ability and reduce the risk of contamination of the remaining yeast.
