This SafSour LB 1 is a specialized yeast developed to produce balanced and complex sour beers. It transforms sugars into both lactic and acetic acids, providing a refreshing acidity while allowing the yeast’s aromatic profile to remain expressive. This culture works best in non-hopped wort, reaching a final pH of 3.6–3.9 within 30 to 48 hours when pitched at the right temperature.
These yeast bricks are for brewing large batches of ale at one time, or pinching off quantities for smaller volumes of brew. Once opened if you are not using the entire brick it should be placed in a bag, vacuum sealed and returned to a cool, dry, storage area below 4°C, where it remains stable for up to 36 months. Doing this will help to preserve the yeasts fermenting ability and reduce the risk of contamination of the remaining yeast.
