This SafBrew LA-01 is a specialty yeast developed for producing low and non-alcoholic beers. This maltose-negative strain ferments only simple sugars such as glucose, fructose, and sucrose, leaving maltose and maltotriose unfermented to keep alcohol levels very low. It delivers subtle fermentation character with very low ester and alcohol production, allowing malt and hop flavours to remain in focus. For best results, it should be stored below 15 °C, where it remains stable for up to 36 months.

These yeast bricks are for brewing large batches of ale at one time, or pinching off quantities for smaller volumes of brew. Once opened if you are not using the entire brick it should be placed in a bag, vacuum sealed and returned to a cool, dry, storage area below 15°C, where it remains stable for up to 36 months. Doing this will help to preserve the yeasts fermenting ability and reduce the risk of contamination of the remaining yeast.
