Most Bavarian beer styles are characterized by a more malt-forward flavour character, which largely owes to the specific yeast strains traditionally used in Bavarian Breweries.

WLP860 Munich Helles Lager Yeast is an excellent example of such a strain that is really fun to work with. It is a very clean and fast fermenting lager strain with medium attenuation that tends to leave just enough residual sugars to provide a nice malty balance to noble hop varieties that are traditionally used in Bavarian lagers.

Description WLP860 Munich Helles Lager Yeast produces minimal sulphur and virtually no diacetyl, allowing for shorter production periods as it allows avoiding additional lagering altogether.

Yet again, for the best results, this yeast requires proper wort oxygenation and thorough temperature control, ensuring optimal working conditions. When used correctly, WLP860 can be used with excellent results all across the lager board, producing flavourful malt-forward Munich, Vienna, Bock, and Dunkel beers, while also being quite suitable for making balanced Pilsner lagers.
