This Voss Kveik Ale Yeast is part of Lallemand's new LalBrew premium series and is a traditional Norwegian dried yeast used in making Norwegian farmhouse ales. The LalBrew Voss strain has been maintained using tradition methods since the 1980s and is now available for the wider brewing community. It's flavour profile is very consistent across the entire temperature range, providing a neutral character with subtle fruity notes of orange and citrus.
As with other Lallemand dried yeast strains, this yeast is ready-to-use immediately. It is a strain of Saccharomyces cerevisiae, and has been specially selected for its unique origins and long history of making Norwegian farmhouse ales, and fast fermented neutral ales.
Voss Kveik Ale Yeast is best used at a fermentation temperature range between 25-40°C. Fermentation can be completed in 2 days depending on the recipe and conditions.

- Fermentation can be completed in 2 days above 40°C (104°F).
- Fermentation can be completed in 3-4 days above 30°C (86°F).
- Fermentation can be completed in 5-7 days above 25°C (77°F).
- Medium to high attenuation and high alcohol tolerance.
- Fermentation rate, fermentation time and degree of attenuation depend on inoculation density, yeast handling, fermentation temperature and nutritional quality of wort.
- Very high flocculation rate; settling can be promoted by cooling and by using fining agents and isinglass.
- More neutral with warmer fermentation. Aroma and flavours may have slight orange and citrus notes with colder fermentation.
