Through process improvements and laboratory analysis, White Labs monitors the glycogen content of the yeast cells to give them more energy when starting a fermentation. PurePitch Next Generation features a breathable proprietary dual-layer film that is designed to allow for a more effective off-gassing that reduces product inflation and delivers higher viability and shelf life of the yeast.

White Labs WLP675 Malolactic Bacteria is a hardy strain of Oenococcus oeni which is used to convert malic acid into lactic acid and decrease acidity and soften final flavours. Produces a moderate level of diacetyl. Robust enough to be used in post-fermentation. Has a high tolerance to low ph (3.0), low temp. environments (down to 55F or 12C) and high alcohol percentages (up to 15% abv).
