Alpha-Amylase is an enzyme that supports more complete fermentation by breaking down complex starches into simpler, fermentable sugars. This allows for a more thorough conversion process, resulting in a cleaner final product with less residual material.
To use: Add 5 g of the enzyme to your mixture, then bring the temperature to approximately 185–203°F (85–95°C) and add the remaining 10 g. This process helps enhance clarity and efficiency in a wide range of fermentation and processing applications.
