Mexican Lager Yeast - WLP 940
Mexican Lagers are famous for being light, crisp, and insanely refreshing – exactly the type of drink you’d want to enjoy in the searing heat of Mexico City. And it’s only natural for this particular style of lager beer to employ a proprietary yeast strain, evolved in breweries across Mexico to tackle the task of producing light lager beers suitable for the local climate.
WLP940 Mexican Lager Yeast comes from such a brewery and it’s an excellent lager strain that produces crisp, dry beers with a very neutral flavour, which can be employed in virtually any lager beer style.
|Description||WLP940 Mexican Lager Yeast is a good attenuator – something you would expect from such a strain – with medium alcohol tolerance and medium flocculation. It tends to produce really clean flavours, with virtually no esters, sulphur, or diacetyl, resulting in nice, balanced, crisp beers.
This makes WLP940 a universal lager strain, since it can be used for fermenting virtually any lager beer style, from light Pilsner and American Lagers to full-bodied Bocks and Swarzbiers, since it lends room for both hops and malts to shine through in the final beer.
