A butterscotch ale - why not! Using a caramel malt, malt sugar and DME along with a light ale yeast and light on the hops (nothing too citrusy), and this butterscotch extract at bottling will help to flavour your smooth drinking ale.
This butterscotch extract is meant to produce a smooth ale, not overwhelming such as you would find in homebrews with too much diacetyl that give an off flavour.
