Mild and not very malty, with very little flavour on its own, flaked corn makes an excellent addition to English Pale Ales or Lagers when you want a more complex flavour.
Flaked corn is also used as a base for distilled spirits.

Historically, Flaked Corn was used to provide a lighter colour and better beer stability to lagers brewed with American 6-row barley, which has higher protein content than the European 2-row barley.
These days, Flaked corn can be found in many craft beer recipes, from Stouts and Belgian Ales to traditional American Cream Ales.
When used in moderate amounts up to 30% of the grain bill it improves beer stability, lightens the body and provides a smooth and refreshing texture to the beer.
