Chalk is not only good for writing on blackboards and sidewalks, but it can also make a huge difference in the quality of your brewing water. Typically used for beers that employ water that is too soft and has a low pH value, Chalk can enhance the enzymatic activity in a mash, increase its pH value, and accentuate the hop and malt flavour character in the final beer.

For best results, consult with your local water report and adjust the addition levels according to the target water profile and beer style you have in mind.

Description: Chalk is best added directly during the mash, when the grains are already soaked in warm water, best in the alpha- or beta-amylase rest temperature range. If added to brewing water before heating its efficacy will be marginal due to overall inability to break down efficiently.

In order to get the best results, use pH strips or a pH meter for fine-tuning your pH and adjusting the addition levels of Chalk according to the situation at hand. Sparing amounts can make a huge difference in terms of flavour and overall quality of the beer.
