WLP072 - French Ale Yeast
When WLP072 French Ale Yeast is used at the lower side of its temperature range it tends to produce a rather clean malt-forward flavour profile that can be employed in a large number of styles, including Brown Ales, Porters, ESBs, Stouts, Amber Ales, and many others. At higher temperatures, this strain will start producing noticeable ethers reminiscent to those found in Belgian strains, which makes WLP072 suitable for making Belgian Blond and Dark Ales, as well as most of the Abbey style beers. Certainly a very interesting strain that can be applied in a variety of styles or used in specialty and experimental brews with exciting results.

The most obvious application for this strain is French Biere de Garde, Belgian Blonde Ale, as well as a broad variety of specialty and experimental beers. WLP072 features a rather broad range of optimal fermentation temperatures – between 63-73F (17-22C) – and a rather flexible ether profile that can be adjusted via fermentation temperature changes.|
