WLP007 - Dry English Ale Yeast
With high attenuation and fairly high alcohol tolerance, WLP007 Dry English Ale Yeast is a rather popular choice for making high gravity English ales that require a distinct dry finish. While sharing the general character with WLP002, this particular strain has a drier finish and better attenuation, which will be a welcome trait in certain beer styles. It doesn’t have the residual sweetness common to other similar British ale strains, so its best applications include IPAs, Pale Ales, Robust Porters, Dry Stouts, Northern English Brown Ales, Red Ales, and other drier British beers.
Dry English Ale YeastWLP007 is an excellent and rather versatile strain that can also be used for styles other than authentic British ales. A lot of commercial craft breweries in the US use it as their house strain for IPAs and Pale Ales, as the high attenuation and high flocculation result in dry and very clean beers, which is beneficial for hop-forward styles, while the peculiar ether component can be integrated to create a unique interplay with certain hop varieties. It is definitely a good idea to consider WLP007 for use in certain experiments, not just for British ales.
