Omega Belgian Saison II Yeast - OYL042
Spicey, peppery, tart, earthy and dry are some words used to describe the ale produced using this Omega OYL042 Belgian Saison II Yeast. Warm fermentation temps also help to create a citrus and tropical fruit flavours. This yeast works well when brewing Saisons and farmhouse ales. This Belgian Saison II prefers to be pitched in the upper 60, lower 70 range.
Something to keep in mind is that this strain does test positive for the STA1 gene, an indicator of Saccharomyces cerevisiae var. diastaticus. It may metabolize dextrins over time, which could result in a higher than expected attenuation.
